A meal that takes 20 mins to prepare, 40 mins bake time (love mindless cooking) and guaranteed "itis".
Potatoes and Chicken Dijon Bake
Ponder this: Yarn for projects or yarn to pet?
Ponder this: Gauge: damn you to hell, exhault you to the heavens or it depends on the knitter?
So what's been going on!
Lets see
- I made a gauge swatch for rusted root, got all sorts of crazy results,,, so what do I do,,,, you see, I am rather smart,,, so I thought, "hmmm, Adrienne should know what is the right gauge, and she is as compulsive to details as I am so if she doesn't know she will find out,, tee hee
,,,,, and I quickly put it in an envelope and shipped it to her,, its your problem now Adrienne, love you girl, LOL - I realized very quickly,,, as in when I got up on Sunday morning that I did not want to cook at all,,,,,, I wanted to scrap and knit and not prepare a big dinner for my hardworking hubby.... I am rather smart..... so what do I do, I convinced him that he will love to try out this new recipe I found, knowing fully well that it will take me all of 15 mins to prepare and so full of cheese it is BOUND to taste good,,, he ate it, he loved it and promptly went to sleep..... ME TIME YAY!
- I started working on my "MOLLY" as I have now decided it should go by. While hubby was playing the games we spent so much money to keep him happy, wifey was sitting down quietly at his side knitting up the yarn that didn't work for Green gable, remarking how wonderful it is for him to be able to do SO well at him game, while I suffer sooooo much to knit on tee,, I am useless,,,,,,, you see, I am rather smart,, and knowing that hubby has a very big soft side, he will feel sorry for me and well try to cheer me up
,,,,, I see more yarn in my near future and we will leave it as that, lol.
Okay, time for some progress
First day
THis is my second cast on, the first one, I didn't quite understand the pattern, when they said Knit rib pattern even,, they kinda mean it, lol. So, I had to pull it out and redo it,,, going smooth now
As you can see, this pattern is NOT knit in the round, so I guess I will be learning how to seam in my near future, I'm using size 7 needles and I love the "pointelle row" the 'eyelets" formed by SSK and YO,,, SWEET
Recipe:
1 tbsp butter, 4 chicken breast, cubed or whole (I cubed mines), 1 lb refrigerated hash brown potatoes, 1 (1lb) pkg of green gaint Frozen Broccoli, Carrots and Cauliflower, 1 (10 3/4 oz) cream of chicken dijon soup (I used the herbed cream of chicken soup) 1 1/4 cups milk, 1/4 cup parmesan cheese ( I used white chedder cheese) and chives, chopped,, optional.
Sauteed chicken breast, in another bowl combine other ingredients leaving some cheese to sprinkle on the top, back until cooked and golden brown,, about 40-60 mins,, go knit, sew or scrap something and set the timer.

I hate to be late, I get into a freakish panic if I am cutting to close to the time I need to get somewhere or leave the house, my live by my watch.
Presently, there is three bottles of wine, a bottle of ketchup, a gallon of milk, and a tub of butter in my fridge; it’s been like that for 2 weeks now.
I love coffee, it is the only drug addiction I have ever have.
I have never smoked ‘weed’ but I have gotten a “contact high” before.
Cigarettes make me cough something terrible and make my eyes run.
I graduated high school a week after my 16th birthday
I force myself to drink water, I am so bad at it, I have to time it during the day.
and that is all folks,, IW, is almost here,,, gosh it is going to be a memorable one.







Your Potatoes and Chicken Dijon Bake looks delicious!!! I must try that recipe myself! Tomorrow it will be a busy day so I just came to say bye and see you next week! I'm off to a short vacation! This weekend was a true sewing marathon, little time to catch up, but friends were and are always on my mind! Hugs from Portugal! (I’m headed traight to bed now, it's past 2.00am)

This recipe looks delicious!!!!! I am going to have to try this.... Now, I want this to come out perfect so I need a few more details, if you do not mind........... #1 How you season/sautee the chicken breast??? and
#2 What brand of hash browns do I buy???
